Jerked Beef

1 lb. brown sugar
1 ½ cups Salt cure (Kosher salt , sea salt, or pickling salt can be substituted)
2/3 cup ground black pepper
1/3 cup granulated garlic
1/3 cup Cajun seasoning
2 -3lbs pcs. Top round (London broil) ask the butcher to tenderize both pieces
Place the first five ingredients in a large mixing bowl and mix by hand until all the lumps are gone. Place about ½ cup of rub on each side of the meat and rub it in to each piece. Cover and refrigerate for two days, turning the meat every 8 hours. Grill ten minutes each side for rare and serve.
