Butternut Squash and Apple Soup

1 med sized butternut squash peeled seeded and diced fine
3 med sized apples peeled cored and diced fine
4 cups chicken stock
1tsp poultry seasoning
1 tblsp curry powder
¼ cup roux (butter and flour)
2 cups heavy cream
1 cup diced ham
1 cup shredded cheddar cheese

Add the first six ingredients to a 4 qt stock pot.  Bring to a boil then turn to simmer. Allow to simmer until squash is tender and soup begins to thicken add the cream and simmer for five minutes. Serve in soup bowls and garnish with the ham and cheese.

Waldorf Salad

4 apples your choice peeled cored and coarsely diced
2 stalks celery minced
 Juice of a half of lemon
1 cup chopped walnuts
½ raisins
½ cup halved fresh grapes
1 cup mayonnaise
¼ cup sugar
Salt and pepper to taste

Mix all of the ingredients together.  Spoon over shredded lettuce and garnish with sliced strawberries or maraschino cherries.
