Harvest Bake

4 med granny smith apples, peeled cored and sliced
3 tblsp sugar
3 cups extra sharp cheddar shredded
1 # bacon fried and crumbled
2 cups Bisquick baking mix
2 cups milk
6 eggs beaten

Preheat oven to 350 degrees. Mix together the apples and sugar.  Layer the apples in a 9 x 13 baking dish, covering the bottom.  Cover apples with the cheese.  Crumble bacon overtop of cheese.  Mix together the bisquick, milk, and eggs, pour over bacon.  Bake 40 minutes or until golden brown, Serve with a side salad for brunch.

 Apple Fritters

2 cups Bisquick
2/3 cup milk
1 egg
4 med granny smith apples peeled cored and diced fine
1 cup vegetable oil for frying
10x sugar  (powdered sugar) for dusting

Mix together the first four ingredients.  Heat oil in a shallow pan.  Drop apple mixture by tablespoon full and fry until golden brown on both sides. Remove to paper towels. Dust with 10 x powdered sugar and serve.
