Pineapple Pork Stir Fry

¼ cup peanut oil
1lbs. boneless pork cut into 1” strips
¼ cup corn starch
¼ cup all purpose flour
1 tsp salt
1 tsp pepper
1tsop ground ginger
½ cup sliced mushrooms
½ cup each julienne carrots, red and green bell pepper, celery and scallions
1 cup diced fresh pineapple peeled and cored
1 6oz. can pineapple juice
¼ cup soy sauce
2 Tblsp molasses
3 Tblsp yellow salad mustard
1 tsp crushed red pepper
1 clove garlic minced
1 Tblsp corn starch

Heat the oil in a large wok.  Mix together the corn starch, flour, salt and pepper and ginger.  Dredge the pork in the flour mixture shaking off excess flour. Stir-fry pork in hot oil browning both sides.  Remove to a holding dish.  Add the vegetables to the wok and stir fry until mushrooms begin to soften.  Add the pineapple and cooked pork to the veggies.  Mix together the remaining ingredients in a separate bow.  Add to the wok and simmer for 3-5 minutes or until sauce thickens.  Serve over rice or Chinese noodles.
