Chicken Romano

1 cup flour all purpose
1 cup plain bread crumbs
1 cup grated parmesan cheese
1 tsp salt
1 tsp pepper
4-6oz skinless boneless chicken breast
¼ cup extra virgin olive oil
½ cup sliced mushrooms
½ cup diced red bell pepper
¼ cup diced ripe olives
¼ cup romano cheese
1 cup sour cream
Salt and pepper to taste
Mix together the flour, crumbs, cheese, salt and pepper. Dredge the chicken to coat both sides. That the oil in a 12” sauté pan. Cook the chicken until browned on both sides and cooked through. Remove chicken to a serving platter. Add the mushrooms, pepper, scallions, and olives to the pan. Cook until mushrooms are just beginning to soften. Add the cheese and sour cream and turn heat to low. Simmer sauce for three to five minutes. Spoon sauce over chicken breasts and serve.
