Asian Pasta Salad

½ cup peanut butter
3 tblsp vegetable oil
2 tsp sesame oil
¼ cup soy sauce
2 tblsp rice vinegar
Juice of one lime
2 cloves garlic minced
1 tblsp minced cilantro
2 scallions minced
1 tblsp minced fresh ginger
1 tblsp red chile paste
2 tblsp sugar
¼ cup each; shredded carrot, cabbage, celery, red pepper and red onion
1 # cooked and diced chicken breast
1 # cooked and chilled spaghetti
½ cup toasted almonds
In a large mixing bowl add together the first 12 ingredients. Stir until smooth then, add all of the remaining ingredients, toss to coat pasta evenly with dressing.
Remove to a serving platter or bowl and garnish with additional almonds and scallions.
