Chicken Athena Show: 6/5/09
4- 6oz. skinless boneless chicken breast Juice of half a lemon 2 cloves garlic minced ¼ cup olive oil 1 cup crumbled feta cheese 1 cup (2 medium) diced tomatoes 3 tblsp fresh minced oregano Salt and pepper to taste
Toss together the first four ingredients in a gallon sized ziplock bag. Marinate at least four hours and heat a grill on medium, high heat mix together the remain together and set aside. Grill chicken breast three minutes each side. Place the chicken on a cookie sheet. Top evenly with the feta mixture. Bake at 350 degrees for 15 minutes or until cooked through.
