Grillades

1 tbslp olive oil

½ cup sliced onions

½ cup sliced green bell peppers

½ cup sliced red bell peppers

¼ cup sliced celery

1 tsp sugar

1 tsp Cajun seasoning

1 # cooked and sliced grilled sirloin of beef

2 med. Tomatoes diced

1 tblsp roux

1 cup beef broth

Salt and pepper to taste

 

Add the first five ingredients to a wok on medium heat.  Cook until onions begin to wilt.  Add the next three ingredients and cook two to three minutes.  Add the remaining ingredients and cook until sauce begins to thicken.  Serve with rice or mashed potatoes.
