West Indies Charred Chicken

Show:  5/1/09

1 cup soy sauce

1 cup lager beer

1 cup brown sugar

Juice of 2 limes

4 cloves garlic minced

2 tblsp minced ginger root

2 tblsp red chile paste

¼ cup Worcestershire sauce

2 tblsp minced fresh cilantro

2 scallions minced

1 tsp ground all spice

1 tsp ground cinnamon

3 # bone in skin on fresh chicken

2 2x4x8 bricks wrapped with heavy duty foil

Mix together the first 12 ingredients.  Put the chicken in to ziplock bags.  Pour equal amounts of marinated over chicken.  Marinate for 48 hours.  In a 14 inch sauté pan, on medium heat, place the chicken skin side down, place the bricks on top of the chicken and cook for 25 minutes.  Turn the chicken, place bricks on top and cook for another 25 minutes.  We used leg quarters for this recipe.  Split broilers will need additional cooking time.
