Sautéed Haddock with Cucumber Sauce

2 8oz.
skinless boneless haddock filets
1 cup all
purpose flour
1 tsp salt
1 tsp
ground black pepper
4 Tblsp
olive oil
1 cup sour
cream
1 cup
mayonnaise
2 med.
Cucumbers, peeled seeded and diced
1 cup
chopped fresh spinach
1 Tblsp
white balsamic vinegar
1 Tblsp
fresh minced basil
Salt and
pepper to taste
Mix together the flour, salt and pepper. Add the
haddock to the flour mixture and coat the filets. Heat the oil in a
large sauté pan on med high. Add the filets to the pan and cook until
golden both sides and cooked through. In a med sized mixing bowl mix
together the remaining ingredients. Serve over haddock filets like you
would tartar sauce. |
