Sauté Cod with Tequila Pine Apple Glaze

 2- 8oz skinless boneless fresh cod filets

½ cup flour

1 tsp salt

1tsp ground black pepper

2 tblsp olive oil

2 tblsp butter

3 oz tequila

4 oz pineapple juice

1 clove garlic minced

2 scallions minced

¼ cup fresh diced pineapple

1 tsp honey

 

Mix together the flour, salt and pepper.  Heat the oil and butter in a 12 inch sauté pan.  Dredge the cod filets in the flour mixture until well coated.  Add the fish to the pan and sauté until brown on both sides and cooked through.  Remove fish to a serving platter.

Add the tequila and flambé.  Add the remaining ingredients and allow sauce to simmer 4-5 minutes and serve sauce over cod filets.
