Chili Verde'

1 # ground beef

1 # ground pork

1 cup diced onion

1 cup diced celery

1 cup green bell peppers diced

1 cup diced poblano pepper

1 Tblsp salt

1 Tblsp cumin ground

1 Tblsp chili powder

1 tsp ground chipotle pepper

1 tsp ground black pepper

4 cloves garlic minced

¼ cup fresh chopped cilantro

Juice of one lime

1 12oz. bottle Pilsner beer

2 cups beef stock

2 -15oz. cans canelli beans ( juice and all)

1 15 oz  can refried beans

In a 8 qt. stock pot, brown, both the beef and pork.  Drain off grease and return to the pan.  Add the onion, celery, green bell and poblano peppers.  Cook on low heat until the onion begins to wilt.  Add the salt, cumin, chili powder, chipotle and black pepper.  Stir seasonings into the beef, pork and pepper mixture.  Add the garlic, cilantro, lime juice, beer and beef stock.  Bring to boil, then turn heat to low and simmer fifteen minutes.  Add the canelli and refried beans and simmer 20 minutes.  Serve in bowls and garnish with shredded cheddar cheese and sour cream.
