Pasta Carbone

2 tblsp. olive
oil
2 tblsp. butter
1 pound of
bacon cooked and diced
1 cup onion
diced
4 cloves of
garlic minced
4 medium
tomatoes diced
¼ cup Chablis
wine
¼ cup of
chicken stock
1 pound of
cooked spaghetti or linguine
¼ cup of
chopped fresh basil
1 cup grated
parmesan divided
Add the first four ingredients in a 4 qt. saucepan and
cook on low heat, until onions begin to wilt. Add the garlic and cook 2-3
minutes. Add tomatoes, wine and stock, and bring to a boil. Add the pasta
and cook 2-3 minutes. Add the basil and ½ cup of parmesan and turn off heat.
Stir to combine all of the ingredients. Serve in four separate bowls and
garnish with the remainder of parmesan.
