Holiday Sauces

Horse Radish Sauce:

1 cup mayonnaise
1 cup sour cream
1/2 cup horse radish
2 tblsp Dijon mustard
2 tblsp tarragon vinegar
1 tblsp hot sauce
Pinch of salt

Combine together all of the ingredients in a large mixing bowl. Chill one hour and serve with beef or pork.


Cumberland Sauce:
1 cup port wine
1/2 cup currant jelly
Zest and juice of one orange
Zest and juice of one lemon
1/2 tsp cayenne pepper

Combine all of the ingredients in a 2 quart. Sauce pan bring to a boil. Reduce heat and simmer for 20-30 minutes. Allow sauce to chill at room temperature and serve with poultry dishes.


Raisin Sauce:
1 cup raisins
1 cup water
1/4 cup bourbon
1/2 cup brown sugar
1/4 cup cider vinegar
1 tblsp ground mustard
1 tblsp Worcestershire sauce
1 tblsp butter

In a 2 qt. sauce pan bring all of the ingredients to a boil. Reduce heat and simmer for 20-30 minutes. Serve with baked ham or roast pork.
