SHRIMP LAFITTE

2 cups Ritz cracker crumbs (about 2 sleeves)
2 cups minced onion
2 cups minced celery
2 cups shredded cheddar
1 # diced cooked bacon
½ cup minced pickled Jalapenos
1 tblsp dry mustard
1 tblsp old bay seasoning
4 eggs
2 # 16-20 peeled and deveined shrimp, split down the middle
35-40 strips of bacon
In a large mixing bowl combine the first 9 ingredients, and set aside. Layout bacon strips and place one shrimp in the center of the bacon. Place one tblsp of stuffing in the center of the shrimp. Wrap the shrimp with the bacon and place on cookie sheet.
Bake at 350 degrees for 20-30 minutes. Bacon should be browned and shrimp cooked through. Serve with red pepper sauce recipe as follows.
Red Pepper Sauce
4 medium red bell peppers seeded and diced
1 carrot peeled and diced
1 rib celery diced
4 cloves garlic
11/2 cups white wine
11/2 cups chicken stock
1 cup heavy cream
In a 4qt sauce pan add all of the ingredients except the heavy cream. Bring to a boil and then turn heat to a simmer. Cook until celery and peppers begin to wilt. Remove from heat and allow to cool. In a food processor, puree the pepper mixture. Return to sauce pan and add the heavy cream simmer for 5-10 minutes and serve over shrimp Lafitte. Sauce is great with grilled chicken or scallops.
