EGGS POLINAISE

2 English muffins halved
4 eggs fried (yolks broken)
4-1/2inch slices of tomato
4-2oz. pieces of ham
4-1/4inch slices of Swiss cheese
Lay English muffins out in a baking dish, crust side down. Layer each muffin with egg, tomato, ham and Swiss cheese. Bake at 350 degrees for 15 minutes. Remove to serving dish top with sauce polonaise. Recipe as follows:
Sauce Polonaise:
1 cup diced hard cooked eggs
1 cup milk
1 can (10oz) cheddar sauce
½ cup cooked diced bacon
1 tblsp minced pickled jalapenos
3 tblsp Ritz cracker crumbs
Bring the first five ingredients to a boil, turn heat to low and simmer for five minutes. Add the cracker crumbs to the sauce and spoon sauce over muffins. Note: Prepare sauce while muffins are baking.
