Pisto Manchego
TV 7 Morning Show -

2 tblsp. olive oil
1/4 cup each chopped onion,
green bell pepper, red bell pepper, scallion and celery
1 cup diced zucchini
2 medium tomatoes diced
4 eggs beaten
1 tblsp. grated parmesan
4 tblsp. shredded
mozzerella
4 eggs hardboiled and
chopped
4-4oz. slices of ham
1 clove garlic optional
salt and pepper to taste
In a large skillet on
medium heat add the oil, onion, peppers and celery. Sauté until onion begins to
wilt and add the zucchini. Sauté for 4-5 minutes more. Add the eggs and cook
stirring from the outside of the pan to the center. When the eggs are cooked,
heat the ham and place on four separate serving plates. Spoon the egg mixture
over the ham and garnish with the hard cooked eggs and both cheeses.
