Ingredients
1 lb. Brown Sugar
11/2 cups Salt Cure (Kosher
Salt, Sea Salt or Pickling Salt can be substituted)
2/3 cup Ground Black Pepper
1/3 cup Granulated Garlic
1/3 cup Cajun Seasoning
2- 3 lb. Pcs. Top Round
(London Broil) Ask the butcher to tenderize both pieces
Directions
Place
the first five ingredients in a large mixing bowl and mix by hand until all the
lumps of sugar are gone. Place about ½ cup of rub on each side of the meat and
rub it in to each piece. Cover and refrigerate for two days, turning the meat
every 8 hours. Grill ten minutes each side for rare, slice and serve.
