Shrimp Fiji
TV 7 Morning Show-July 15, 2005
2 tblsp. Butter
½ cup coarse diced celery
½ cup coarse diced red pepper
¼ cup whole almonds or cashews
1 clove garlic minced
1tsp. fresh minced ginger root
½ lb. peeled and deveined shrimp
1 tbslp. Orange marmalade
juice of one fresh orange
1 ½ oz. Malibu Rum
2/3 cup heavy cream
1 tblsp. Toasted coconut
1 tblsp. Minced scallion
Add the first six ingredients to a 14” skillet and let
simmer for 5 minutes. Add the next four ingredients and simmer until shrimp ate
pink. Add the heavy cream and simmer for 5-10 minutes. Serve over rice and
garnish with the coconut and scallions.
