Grilled Salmon with Mango Salsa

TV 7 Morning Show June 17, 2005 

4- 4oz. Salmon filets

Salt and pepper to taste 

Salsa

2 small mangos, peeled and chopped into 1 inch chunks

3 tbsp. chopped red bell pepper

3 tbsp. red chopped onion

2 tbsp. minced cilantro

2 tbsp. fresh limejuice

2 tsp. minced jalapeno pepper

1 tsp. sugar or Splenda 

Salsa: Combine all salsa ingredients in a medium bowl.  Chill for at least one hour.

Grill the salmon according to taste.

Serve salmon with salsa, a side of asparagus.
