Dublin Coddle
TV 7 Morning Show April 15, 2005
½ lb. diced cooked bacon
1 lb. diced cooked pork sausage
(4oz. links cut into thirds)
1 cup diced celery
1 cup diced carrots
1 clove minced garlic
1 tsp. whole leaf thyme
16 oz. chicken stock
1-12oz lager beer
½ lb. diced raw chicken breast
Bring the first nine ingredients to a boil and turn heat to
simmer. Add the chicken and simmer for 30 minutes. Serve over mashed or cooked
sliced potatoes. Garnish with crumbled blue cheese, chopped parsley and a
biscuit.
