Italian Chicken Sausage Stew

TV 7 Morning Show April 8, 2005

 

½ gal. rich chicken stock

2 cups onions diced

2 cups carrots diced

2 cups celery diced

2 cups green bell pepper diced

2 cups parsnips diced

2 cups turnips diced

3 cloves garlic minced

2 tblsp. fresh chopped parsley

1 ½ lb cooked Italian chicken sausage cut into ½ inch pieces

grated parmesan cheese to garnish

 

In a 12 quart pot, add the first nine ingredients, bring to a boil and then turn heat to simmer for 30 minutes.  Ass the chicken sausage and simmer for 15 minutes more.  Serve over rice or pasta, and garnish with the parmesan cheese.
