Steaks with Red Eye Gravy and Fried Eggs

4-10-12oz. Strip Style Top Sirloin Steaks
4 Tblsp. Butter
salt and pepper to taste
1 cup strong coffee
½ cup real maple syrup
1 tsp. Louisiana hot sauce
8 eggs for frying
In a 14” skillet heat 1
tablespoon of the butter until it is brown. Season the steaks with the salt and
pepper. Braise the steaks each side 34 minutes add the coffee, syrup and hot
sauce to the pan and reduce the gravy by one half. Using the remaining 3
tablespoons butter, fry the eggs and serve two with each steak. Pour gravy over
each steak and serve.
