Skewered Beef with Salsa Cruda

2 lbs. Lean Sirloin of Beef
cut into 16 two ounce pieces
1 cup dry red wine
1 cup Italian dressing
4 – 12” Bamboo skewers
(soaked for 30 minutes in water)
1 cup diced onion
1 cup diced green bell
pepper
1 cup diced zucchini or
yellow squash
1 cup whole kernel corn
2 cups diced tomato
1 tbsp. ground cumin
1 tsp. salt
1 tsp. pepper(cayenne)
1 clove garlic (minced)
1 tbsp. chopped fresh
cilantro
½ cup white vinegar
Juice of one lime
1 – 6oz. can chopped green
chilies
Combine the beef, wine, and
dressing and marinate overnight. Soaking the skewers in water will prevent them
from burning during cooking. Skewer four pieces each of beef, adding onions or
peppers (optional).
In a 14” Teflon pan, add
the onion and cook on high heat. When the onion starts to brown, add the
pepper, squash and corn. Cook the mixture for 3-4 minutes and add the cumin,
garlic, salt and pepper. Cook for another 3-4 minutes and add the tomato,
cilantro, vinegar, lime juice and chopped green chilies.
Simmer for ten minutes and
remove from the heat. Grill the skewered beef to desired temperature and top
with salsa.
