TURKEY DAY
LEFTOVERS- ENCHILADAS BLANCO
3 cups gravy
1 cup milk or heavy cream
3 cups diced cooked turkey
2 cups shredded cheddar
1 cup diced leftover relishes
(olives, hot peppers, scallion, celery, etc.)
4- 8" tortillas
Mix together the gray and milk. Add one cup of the gravy
mix to the turkey and one cup of the cheese and half cup of the relish
mixture. Divide the turkey mixture into four equal parts. Place the mixture
into the center of the tortillas and roll. Place one cup of gravy mixture into
a 9x12 Pyrex dish. Add the tortillas, and cover with the remaining 2 cups of
gravy mix, cheese and relishes. Bake uncovered at 350 degrees for thirty
minutes and serve.

LEFTOVERS-CANNELONE
3 cups gravy
1 cup milk or heavy cream
3 cups diced cooked turkey
1 cup grated parmesan
1 cup shredded mozzerella
4 cooked lasagna noodles
Mix together the gravy and milk. Add one cup of the gravy
mix to the diced turkey and parmesan cheese. Mix and divide into four equal
parts. Spoon onto the center of each lasagna noodle. Place one cup of gravy
mix onto a 9x12 Pyrex dish. Roll the pasta and turkey mix and place the rolls
on the pan. Spread the remaining gravy mix over the pasta and add the
mozzerella. Cover with foil and bake at 350 degrees for forty five minutes and
serve.
