Jack Daniels Prime Rib

1 7 lb. Boneless Ribeye of Beef

1 Quart of Jack Daniels Bourbon

6 cloves of garlic, crushed

1 tbsp. paprika

2 tbsp. salt

2 tbsp. ground black pepper

2 tbsp. granulated garlic

1 tbsp. white granulated sugar

In a 4” deep roasting pan, add the ribeye, bourbon, and garlic cloves.  Marinade the beef for at least three days, turning the beef over each day.  Two to three hours prior to roasting, drain the bourbon and garlic.  Mix the seasonings together and rub into the beef.  In a preheated 350 degree oven, roast for one hour and 30 minutes for a medium rare center.

½ cup red onion, diced

3 scallions minced (whites only)

4 oz. (1 ½ cups) Jack Daniels Bourbon

½ cup brown gravy

On medium heat, melt the butter and add the white and red onion.  Saute until the onions begin to wilt.  Add scallions and the bourbon and flambι. When alcohol has burned off.  Add the gravy and the garlic.  Simmer sauce for 2 to 3 minutes and serve over sliced JD Prime Rib.  This sauce is great with grilled pork or chicken as well.
