Scampi A
La Crθme with Cheese Tortellini

1 pound of
peeled and deveined shrimp (21-25 count per pound)
1 pound of
cheese tortellini
1 tbsp.
butter
1 tsp
olive oil
1 clove
garlic, minced
1 tsp.
lemon zest
1 tbsp.
chopped fresh basil
1 tbsp.
minced scallion
Ό cup
Pinot Grigio wine
1 cup
heavy cream
Ό cup
shredded Asiago cheese
Fresh
chopped parsley to garnish
In a large
sautι pan, melt the butter and oil over medium heat. Add the shrimp and cook
until pink on both sides for 5-6 minutes. Add the garlic, lemon zest, scallion
and basil and simmer for 3-4 minutes. Add the wine and tortellini and simmer
for 3-4 minutes.
Add the
heavy cream and Asiago cheese, simmer for 3-4 minutes, stirring often. This
should be a light sauce to coat the pasta and shrimp. Serve in four pasta
bowls. Garnish with fresh chopped parsley.
