4 – 12oz. NY Strip Steaks
4 strips raw bacon, diced
1 medium onion, diced
1 medium green bell
pepper, diced
½ lb. Mushrooms, sliced
3 medium tomatoes, diced
1 clove garlic, minced
1 cup beef stock
½ cup crumbled blue cheese
2 fresh sliced scallions
for garnish
In a 4 qt. saucepan –
brown the bacon. Add the onion, bell pepper and mushrooms. Saute until the
onion begins to wilt. Add the garlic, tomatoes and beef stock. Let simmer for
fifteen minutes and add the blue cheese. Stir until the cheese is melted. Serve
the sauce over grilled New York strip steaks
