June 04, 2004 recipe from Chef Chris Manning:

Peach Chutney with Spicy Pork

Peach Chutney
½ cup cider vinegar 1 Tbsp fresh chopped garlic
½ cup honey 1 Tbsp Dijon mustard
juice of one orange pinch of ground cinnamon
juice of one lemon pinch of ground cloves
3 peaches peeled, pitted, and diced pinch of allspice
1 small diced onion ½ tsp crushed red chilies
½ cup raisins 1 tsp fresh minced ginger root
½ cup dried dates or cranberries

Combine all of the ingredients in a two-quart saucepan.
Simmer for 45 minutes or until chutney thickens to a jam like texture
Serve at room temperature with spicy pork chops

Spicy Pork Chops
4-8oz center cut pork chops 1 Tbsp salt
2 Tbsp paprika 1 Tbsp sugar
2 Tbsp granulated garlic 1 tsp ground cumin
1 Tbsp cayenne pepper

Combine all of the spices and mix well. Coat each chop and let marinate overnight. Grill chops to desired temperature and serve with peach chutney.
