Chris Manning:
Memorial Day Grilling
Yogurt Marinated Shrimp
12 V-15shrimp peeled and de-veined
1 cup fine diced, peeled, seeded cucumber
1 cup fine diced red onion
1 cup plain yogurt
1 clove garlic, minced
Juice of one lemon
1 tsp celery salt
1 tsp crushed red pepper
1 tsp ground coriander
1 Tbsp ground cumin
1 ½ tsp fresh minced ginger
3 bamboo skewers soaked in water for one-half hour
Skewer the shrimp with four pieces each and place in a shallow pan
Mix together the remaining ingredients and pour evenly over the shrimp
Marinate twelve hours
Grill on low heat until shrimp are pink and cooked through
Cabernet Mustard Marinade for Beef
1 cup Cabernet Sauvignon
½ cup Dijon mustard
2 Tbsp Worcestershire sauce
2 Tbsp fresh thyme leaves
2 cloves garlic, minced
Salt and pepper to taste
4 -10 oz. NY strip steaks
1 medium onion diced or sliced
Lay the strips in a shallow pan and top with onions
Season with salt and pepper
Combine the remaining ingredients and mix well
Pour over the steaks evenly
Marinate overnight and grill to desired temperature
