October 3, 2003 recipe from Chef Chris Manning:

Kuchke

1 stick butter
1 pound smoked sausage, sliced thin
2 cups thin sliced green cabbage
2 cups thin sliced Spanish onion
½ cup thin sliced red bell pepper
1 cup thin sliced apples (cored)
1 cup thin sliced pears or plums
½ cup thin sliced scallions
¼ cup brown sugar
¾ cup apple cider
2 Tblsp cider vinegar
1 dash ground cinnamon
1 dash ground ginger
salt and pepper to taste
2 cups cooked egg noodles
¼ cup grated swiss cheese

In a 4 Qt. Pan on medium heat, melt the butter and add the sausage. Saute for 3-4 minutes and add the cabbage, onions and peppers. Saute stirring every 2-3 minutes until the pepper begin to wilt. Add the apples, pears, scallions and brown sugar. Cook until the sugar is just starting to bubble. Add the cider, vinegar, cinnamon, ginger and salt and pepper to taste. Let simmer 3-4 minutes and add the noodles. Heat until noodles are warm. Either serve from a large serving dish or individual bowls and garnish with swiss cheese.
