July 4, 2003 recipes from Chef Chris Manning:

Kamaryo Chicken

4-6 ounces skinless, boneless, chicken breasts
2 Tblsp olive oil
1 Tsp minced garlic
1 Tsp crushed red pepper
Ό cup honey
Ό cup soy sauce
Ό cup minced onion
Ό cup sherry wine
2 Tsp Dijon mustard

combine the above ingredients in a 4 Qt mixing bowl and let marinate overnight. Grill for the chicken for 15 to 20 minutes, turning every 3-4 minutes. 

“Kamaryo” is the Indian term for Black River. This is my father’s recipe and he used it for pork as well.
