Sausage, Olive & Four Cheese
Stuffed Portabella Mushrooms


4 Lg Portabella Mushrooms With Stem Removed
½ Cup Diced Cooked Italian Sauce
¼ Cup Shredded Cheddar Cheese
¼ Cup Shredded Provolone Cheese
¼ cup Grated Parmesan Cheese
¼ Cup cottage Cheese
1 egg
½ cup brad crumbs
¼ cup diced green olives
¼ cup diced ripe olives

Mix together the sausage, cheeses, olives, egg, and bread crumbs. Stuff the mushroom caps and bake on a lightly greased cookie sheet at 350 degrees for 15-20 minutes, or until browned. This recipe is great for vegetarians, simply omit the sausage and add a quarter cup each red bell pepper and zucchini squash. 

Martini Shrimp Cocktail

1 31-40 count cooked peeled and divided shrimp
1 cup ketchup
2 tablespoons horseradish
2 tablespoons vodka
1 Tsp Worcesteshire sauce
1 Tsp hot sauce
Juice of one fresh lime
Extra lime and olives to garnish
Salt and pepper to taste

Blend the ketchup, horseradish, vodka, hot sauce and worcesteshire sauce with lime juice in a 1 Qt mixing bowl. Fill 4 4Oz martini glasses with sauce and place 8-10 shrimp around the rim of the glass. Garnish with olives and a dash of salt and fresh cracked pepper.
