Chris Manning:
Radiatore Pasta With Sopressata Sausage Ala Lazio
8 Oz Sopressata Sausage sliced thin
Ό cup diced onion
1 ½ cups peppers diced, your choice
Ό cups scallions sliced
1 ½ cups fresh tomatoes dices
1 cup cooked diced chicken breast
1 TBslp Butter
½ cup chicken stock
1 ½ Tbslp Grated Parmesan Cheese
2 cups cooked Morgias Radiatore Pasta
In a 12 pan on low heat begin cooking the sausage. Cook sausage for 3-4 minutes and add the butter, onions, peppers, scallions and tomatoes. Switch to medium heat and cook until onions are translucent. Add the chicken stock and let simmer for 5 minutes. Add the pasta and parmesan, heat for 1-2 minutes and serve with Italian bread and salad.
