Salt Cod Gravy
1 lb. package salt cod
3 cups heavy cream
1 tsp. fresh cracked pepper
3 Tblsp. flour
2 Tblsp. butter
Starting 3 days before service, soak the fish in water over night. Drain
and soak the second night with milk. Drain and repeat with milk the third
night. Drain and place in saucepan, cover with water and let simmer for 20
minutes. Drain and let cool on low heat. Cook the butter and flour
together until lightly browned. Add the cream and pepper and cool until
smooth and just begin to thicken. Flake the fish apart and add to the
cream. Simmer for 10-15 minute and serve over toast points with boiled
potatoes.
