Sautéed Haddock with Grape Tomato Shrimp and Chipotle Salsa

Grape Tomato Shrimp and Chipotle Salsa

1 pint grape tomatoes halved

1 tsp. ground chipotle peppers

½ lb. cooked and course chopped shrimp

½ cup diced red onion

1 4oz.can diced green chilies

2 Tblsp. olive oil

Juice of 1 lime

Salt and pepper to taste

In a small baking dish add the grape tomatoes and chipotle pepper.  Bake in a preheated 400 degree oven for 10-12 minutes.  Remove and let cool.  Combine the tomatoes with the remaining ingredients and mix thoroughly.  Cover and refrigerate for one hour.

 Sautéed Haddock

4 8oz. skinless, boneless haddock filets

¼ cup all purpose flour

1 Tblsp. Old Bay seasoning

2 Tblsp. Olive oil

1 Tblsp. butter

 Mix together the flour and seasoning.  Dredge the haddock in the flour mixture.  Heat a 14” skillet over medium heat; add the oil and butter to melt.  Add the haddock filets and sauté on both sides until golden and cooked through.  Remove the fish to serving plates and top with equal amounts of the salsa.
