Seafood Chili

 

6 cups clam juice

1 medium onion, diced

1 large green bell pepper, diced

3 ribs celery, diced

3 cloves garlic, minced

3 medium tomatoes, diced

1 small jalapeño, minced

Juice of 1 lime

3 tblsp. chili power

1 tblsp. ground cumin

½ cup roux or refried beans

1 lb. cooked 55-70 count shrimp

1 lb. cooked 30-4- count scallops

1 lb. flaked, cooked crab meat

 

Combine the first 11 ingredients in a 8 qt. stock pot and bring to a boil.  Turn the heat to low and add the remaining ingredients.  Simmer for 20 minutes stirring every five.  Serve in bowls with sour cream to garnish.
