Lemon
Curd
4 Tsp. grated lemon zest
2/3 cup fresh lemon juice
5 whole eggs
1 egg yolk
1 cup sugar
1 stick (4oz.) butter,
melted
In a food processor, add
all the ingredients except the butter, and process until smooth. With
the processor running add the melted butter. Pour mixture into a
non-reactive sauce pan. cook over medium heat, stirring constantly
until curd thickens, about 10 minutes. Let cool and use to fill pie
crust (see below) or with layer cakes.

1/2 box of lemon Chalet
Crèmes Girl Scout cookies, crushed
1/2 stick butter, melted
1 1/4 cup pecans, chopped
Mix ingredients and press the mixture
into a greased glass baking dish. Bake at 350 degrees for 15 minutes
and then let cool. Fill with lemon curd filling.
