Lemon Curd

 

4 Tsp. grated lemon zest

2/3 cup fresh lemon juice

5 whole eggs

1 egg yolk

1 cup sugar

1 stick (4oz.) butter, melted

In a food processor, add all the ingredients except the butter, and process until smooth.  With the processor running add the melted butter.  Pour mixture into a non-reactive sauce pan.  cook over medium heat, stirring constantly until curd thickens, about 10 minutes.  Let cool and use to fill pie crust (see below) or with layer cakes.

Lemon Out of Sigh Delight Crust

1/2 box of lemon Chalet Crèmes Girl Scout cookies, crushed

1/2 stick butter, melted

1 1/4 cup pecans, chopped

 

Mix ingredients and press the mixture into a greased glass baking dish.  Bake at 350 degrees for 15 minutes and then let cool.  Fill with lemon curd filling.
