Low Country Boil
12 small red skin potatoes
2 medium onions, peeled and quartered
1 carrot , peeled and cut into 2” pieces
3 ribs clelery cut into 2-3” pieces
1 lb. kielbasa sausage, cut into 2” pieces
1 lb. shrimp, shell on
5 cloves garlic, peeled only
3 tblsp. “Old Bay” seasoning
1 lemon, halved
¼ cup (1 stick) butter, melted
1 ½ qt. water
In a 16 qt. stock pot bring the water ot a boil. Add the “Old Bay”
seasoning, garlic, lemon and potatoes. Boil for 15 minutes and add the
sausage, onion, celery and carrots. Boil 15 minutes longer, then add the
shrimp. Turn heat off and allow to stand 5 minutes. Strain and serve on
large platter with melted butter on the side. |
