Haddock Baked In Parchment Paper

 

2 – 16” x 24” sheets of parchment paper folded in half and cut into a heart shape

¼ cup each, julienne cut celery, carrot, onion, red bell pepper

2 tsp. olive oil – divided

Salt and pepper to taste

4 lemon slices

2 – 8oz. skinless boneless haddock filets

 

Open the 2 sheets, showing a heart shape.  On one side of each sheet arrange half of each veggie.  Drizzle with the oil and season with the salt and pepper.  Add the lemon and top with the haddock.  Fold the other side of the paper over the fish.  Alternately crimp the open edges of the paper a half inch at a time, until the paper is completely sealed.  Place on a baking tray and bake in a pre-heated 350 degree oven for 15-20 minutes.  When fish is firm it is usually cooked through.  Cut a slit in top when serving to allow the aroma to be enjoyed by your guests.
