Chicken Paprikas
1 Tblsp olive oil
½ cup diced onion
½ cup diced celery
½ cup sliced mushrooms
½ cup diced red bell pepper
1 tsp. crushed red pepper
2 bay leaves
2 cloves garlic minced
3 tblsp. Hungarian paprika
1 lb. diced cooked chicken
1 tsp. instant coffee
1 cup chicken broth
2 cups low fat sour cream
In a 4 qt. sauce pan on medium het add the first seven ingredients.
Cook until onions begin to wilt. Add the garlic, paprika and chicken
and cook for five minutes, stirring often. Add the coffee and broth
and bring to a boil. Add the sour cream and trun heat to low.
Cook for two to three minutes, stirring often. Turn off heat and serve
over cooked rice or egg noodles.
