Dijon-Horseradish Rib Rub

2 cups Dijon mustard

1 cup prepared horseradish

6 cloves garlic minced

1 Tblsp. whole leaf thyme

2 Tblsp. fresh chopped parsley

1 – 4lb. beef rib roast

 

Mix together the first five ingredients.  Using a pastry brush, or your hands, coat the rib completely with the mixture.  Let stand covered overnight in the refrigerator.  Bake in a preheated 350 degree oven for one hour and fifteen minutes for rare.
