Irish Onion Sauce

3 Tblsp. butter

3 medium onion, diced fine

3 cloves garlic, minced

½ tsp. salt

½ tsp. ground black pepper

2 Tblsp. flour

2 cups heavy cream

 

In a 4qt. sauce pan, melt the butter over medium heat.  Add the onions and cook until wilted.  Add the garlic, cook for one minute.  Add the flour and cook 4-5 minutes.  Add the heavy cream and bring to a simmer.  Simmer for 4-5 minutes and serve with sautéed pork chops, chicken or lamb.  To serve with beef, add one half cup blue cheese.
