TV Morning Show 10/12/07

Fettuccine Pomodoro

2 tblsp. Extra virgin olive oil

1 cup onion, diced

2 cloves garlic, minced

8 Roma tomatoes, diced

2 tblsp. fresh basil, chopped

1/2 cup chicken broth

1/2 lb. fettuccine, cooked

Salt and pepper to taste

Grated parmesan and fresh chopped parsley to garnish

 

In a 4 qt. sauce pan on high heat, add the oil and onion.  cook until onion begins to wilt.  Add thegarlic, tomatoes and basil.  Continue to cook on high heat until tomatoes begin to wilt.  Add the broth and pasta and stir to mix ingredients together.  cook fo9r 4-5 minutes and serve with parmesan and parsley garnish.
