Breast of Chicken Vienna
2 Tblsp olive
oil
2 Tblsp butter
1/2 cup flour
salt & pepper
to taste
4 - 4oz.
skinless boneless chicken breast pounded 1/4 thick
4 oz. ham,
diced
1/2 cup sliced
onions
1/2 cup diced
apples
1 cup chicken
gravy
1/2 cup sour
cream
fresh chopped
parsley to garnish
In a 14" skillet on medium heat add the oil and butter.
Dredge the chicken breasts in the flour and season with the salt and pepper.
Sauté the chicken on both sides until brown and cooked through. Remove
chicken to serving plates and add the ham, onion and apple to the pan.
Sauté until onions begin to wilt. Add the chicken gravy and sour cream
and stir. Allow to simmer 3-4 minutes and serve over chicken breasts
Garnish with fresh chopped parsley. |
