Sautéed Pork Loin, Ala Jose Phine

 

1/2 cup all purpose flour

1/2 cup unseasoned bread crumbs

1/2 cup grated parmesan cheese

4 pieces 4 oz. pork loin, boneless, pounded to 1/4" thickness

salt & pepper to taste

1 tblsp. each olive oil and butter

1/2 cup sliced red onion

1/2 cup sliced red bell pepper

1 cup sliced mushrooms

1 15oz. can artichoke hearts, drained and sliced

1 clove garlic minced

juice of 1 lemon

1/2 cup heavy cream

1 tblsp. butter

chopped parsley to garnish

Combine the flour, crumbs and cheese together and mix well.  Season the pork with salt & pepper and dredge the pork in the flour mixture.  Allow the pork to sit each side 4-5 minutes.  Add the oil and butter in a 14" skillet on medium heat.  Sauté the pork on each side 4-5 minutes or until golden.  Take the pork to a serving platter.  Add the onion, peepers, mushrooms and artichokes to the skillet.  Sauté until onion just starts to wilt.  Add the garlic and lemon juice cook fro one minute and add the heavy cream.  Cook two minutes and spoon sauce over the pork and garnish with fresh chopped parsley.
