Chipotle Citrus BBQ Sauce/Marinade
¼ cup vegetable oil
½ cup yellow onion, chopped
½ cup green bell pepper, chopped
2 garlic cloves, minced
3 tablespoons ground chipotle pepper
1 tablespoon ground cumin
1 tablespoon ground mustard
1 teaspoon ground ginger
1 teaspoon ground pepper
1 teaspoon thyme leaves
1 teaspoon ground black pepper
1 teaspoon crushed red pepper
2 bay leaves
1 cup fresh orange juice
¼ cup fresh lemon juice
¼ cup fresh lime juice
2 cups ketchup
¼ cup molasses
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1 tablespoon hot sauce
¼ cup water
In a four-quart saucepan, add the first thirteen
ingredients Cook over medium heat for 10 to 15 minutes, stirring every two
to three minutes. Add remaining ingredients and bring to a simmer. Cook
uncovered, stirring often as the sauce begins to thicken, for about 20
minutes. Bring to room temperature and discard the bay leaves. Keep
refrigerated and use as a marinade and basting sauce for pork and chicken.
