Rum Cake
1 cup chopped
nuts, your choice
1
eighteen-ounce package yellow cake mix
1 four-ounce
package vanilla pudding mix
4 eggs
½ cup water
½ cup vegetable
oil
½ cup dark rum
Preheat oven to
325 degrees. Grease and flour a 10-inch tube pan. Sprinkle nuts on the
bottom of the pan. Mix all ingredients together, and pour over nuts. Bake
one hour. Cool and invert on to serving plate. Drizzle top and sides with
glaze, prepared as follows:
¼ pound butter
(one stick)
¼ cup water
1 cup sugar
½ cup dark rum
Melt butter in
a saucepan. Add water and sugar, and bring to a boil. Cook for four to five
minutes, stirring constantly. Remove from heat and stir in rum. Glaze cake
with mixture, then garnish with whipped cream, blueberries and raspberries.
