Chicken Souvlaki with Tzatziki
2
pounds skinless, boneless chicken breast, cut into 1-inch cubes
1
tablespoon salt
2
teaspoons ground black pepper
1 cup
virgin olive oil
juice
of one lemon
2
tablespoons oregano leaves
pita
bread
chopped
fresh mint for garnish
In a large mixing bowl,
combine all ingredients and mix well. Marinate at least four hours. Divide
mixture into four equal parts and slide chicken onto skewers. Grill on both
sides until cooked through. Remove the chicken to pita bread and serve with
tzatziki, as follows.
Tzatziki
2 cups
plain yogurt

cloves garlic, minced
1 large
cucumber, peeled, seeded and chopped fine

tablespoons olive oil
2
tablespoons white vinegar
salt &
pepper to taste
Combine all
ingredients in a food processor and blend until smooth. Serve with souvlaki
pitas, with chopped fresh mint to garnish.
