Maple Mole Stuffed Pork with Strawberry Salsa
For
the pork:
1/3 cup
real maple syrup
1/3 cup
Dijon mustard
1/3 cup
minced red onion
1/3 cup
chocolate chips
1/3 cup
crunchy peanut butter
2
one-pound pork tenderloins, butterflied down the center
salt
and pepper to taste
Mix the first five
ingredients together. Divide the mixture in half, stuffing each tenderloin
with half the mixture. Wrap in foil and bake in a preheated 350 degree oven
for 45 minutes. Slice and serve with salsa recipe as follows.
For
the salsa:
½ cup
diced red onion
½ cup
diced red bell pepper
½ cup
diced green bell pepper
1½
cups strawberries, coarsely chopped
¼ cup
cilantro
1
jalapeno pepper, minced
juice
of one orange
juice
of one lime
2
tablespoons extra virgin olive oil
salt
and pepper to taste
Combine all salsa
ingredients in a large bowl, mix well, and refrigerate for one hour. Serve
with pork, chicken or fish dishes.
